I have the X91, probably fairly similar. I don't fiddle with it too much really. The main things I mess with are sensitivity and greyline. If it's not reading good automatically, you can crank up the sensitivity until there is a reasonable amount of clutter on the surface. You can also toy with the greyline to help differentiate rock from mud. It kinda takes a while to learn to read the graph because you have to make mental notes about what is really down there vs. what you are seeing. If you can go somewhere really clear and graph along in 10 to 15' of water, you can learn what looks like what on the graph. In a kickboat, I think you could probably actaully get on top of a lot of fish by being really quiet and fish for them using the graph. In a boat you usually need at least 20' of depth to get over the fish without them spooking.
